Guidance: Ultrafiltered Milk in the Production of Standardized Cheeses and Related Cheese Products
Filed on: 08/11/2017 at 08:45 am Scheduled Pub. Date: 08/14/2017
FR Document: 2017-17118 PDF 8 Pages (186 KB) Permalink
- Ø The notice states FDA will exercise enforcement discretion regarding the use of UF milk in the production of standardized cheeses and related cheese products until completion of the rulemaking regarding same. FDA acknowledges that “due to recent developments in the export market, the United States dairy industry is experiencing an oversupply of and pricing challenges with domestically produced UF milk” and therefore there should be flexibility in manufacturing procedures and ingredients so long as the basic nature and essential characteristics of the food are preserved.
